Iowa Valley Announces New Meat Cutting Courses to Meet Industry Demand

Iowa Valley Business and Community Solutions is excited to announce the launch of two new hybrid learning courses designed to equip individuals with the skills needed for successful careers in the meat industry. These courses, offered in monthly cohorts, combine the flexibility of online learning with essential hands-on experience at their partner location, Nimrod Meats in Iowa Falls, Iowa.

The first course, “Mastering the Meat Counter,” provides the foundational skills necessary for individuals looking to excel as knowledgeable and efficient meat clerks. Participants will gain practical experience in meat packaging, effective clerk and counter sales techniques, proper customer interaction, and essential product knowledge. The online curriculum, including lessons, assignments, readings, and instructional videos, is complemented by mandatory in-person lab sessions at Nimrod Meats. These sessions offer critical hands-on practice and direct observation to ensure competency. Students will need access to a computer or laptop and internet to participate in the online portion of the course.

For those seeking more in-depth butchery skills, Iowa Valley is also offering “Meat Cutting Essentials.” This intensive course provides hands-on training in the essential techniques required to transform primal cuts into marketable retail portions. Participants will learn the art of breaking down beef, pork, lamb, and other meats, mastering the precise cuts necessary to yield subprimal and retail cuts. The curriculum also covers trimming and portioning techniques for consistent quality and maximizing yield, as well as packaging and presentation for maintaining freshness and visual appeal. Like the “Mastering the Meat Counter” course, this program utilizes a hybrid learning model with online coursework and mandatory in-person lab sessions at Nimrod Meats, emphasizing safety, efficiency, and the artistry of butchery.
